4 Cups Flower petals, heads, no greens
4 1/2 cups of medium hot water - steep for 20 to 30 minutes (longer times makes a darker jelly) - then drain/strain the liquid
Keep 4 cups of the liquid - put in pot
1/2 cup lemon juice - this sets the color
4 1/4 teaspoons calcium water added and mixed well - bring to a boil
mix 4 1/4 teaspoons Pomona's pectin to
1 cup of sugar - SLOWLY add in the mixture stirring well, it will clump if you go too fast.
Pomona's Pectin is a commercial pectin to buy on Amazon - with this pectin (unlike the small box kind) you can double, triple, etc. the recipes to make a much larger batch at a time.
